Hello everyone I thought I would do another vegetarian recipe swap since the last one I did turned out so well! For this swap we will be sending 1 partner 4 vegetarian recipes. You can print them out on the computer,use recipe cards whatever you like, its always nice to get creative.Vegans are welcome too. Im keeping this a USA swap only to keep down on postage Have fun! I am not vegetarian, but I do make a lot of vegetarian recipes. Also vegan ones. I really like a huge variety of foods. And I also like 6x6 recipe cards. But do them in whatever way you want. printed out, hand written or however.

My daughter recently decided to be vegetarian so the whole family is eating very little meat. I have been reading tons of cookbooks about vegetarian recipes so I have some good ones to share and would love get some new favorites others!

here's two just in time for the July 4th weekend here in the US.

BBQ jerk skewers

ingredients: - red peppers - onion - portabello mushroom - cherry tomatos - extra-firm tofu - mango - pineapple

sauce: - jerk marinade (from a bottle. try larger supermarkets or "ethnic" stores) - bbq sauce (we used honey-garlic, but you can use whatever type you want. be sure to check the ingredients because i realized only the day after that there were anchovies in it :( )

non-food ingredient: - skewer sticks (we bought metal skewers because they're reusable, and because bamboo ones are splintery sometimes)

you can use any veggies you want. the mango & pineapple came to me when we were watching "sneakers". in hindsight i think plantain would've been awesome as well.

directions: - chop the ingredients into bite-sized pieces - stab ingredients onto skewers (i'm a bit OCD so each piece could not be beside a piece of the same colour) - jerk marinade is freaking SPICY so what we did was we put a good amount in a bowl and cut it with BBQ sauce. the ratio was at least 60% BBQ sauce and the balance jerk sauce. taste it before you marinade because you don't want to set your friends' mouths on fire. liberally brush the skewers with the marinade mix and place in refrigerator for at least an hour to absorb flavour. - BBQ those crazy sticks! barbeque until there is some black on the skewers. - consume.


Harmony bread (this recipe calls for baking briefly in the oven, but I bet with a bit of creativity it could be grilled.)

Ingredients:

1 thin sourdough baguette 3 cloves garlic, chopped 3 tbsp earth balance 1 tomato shredded jack cheese, to taste a few basil sprigs

Procedure:

  1. Preheat oven to 425. Combine garlic and earth balance in a food processor until smooth*. Slice bread lengthwise and spread butter evenly. Sprinkle with about 3/4 of the shredded cheese.
  2. Slice tomato thinly and place on top of cheese layer. Pick the basil leaves off the stem and place them on the tomato. Garnish with the rest of the cheese.
  3. Cook for 6 or so minutes at 425, then broil on low for about two minutes.
  • If you don't want whole basil leaves on your bread, you can grind them up in the garlic butter.

I'm not a vegetarian, but I would like to try it for two weeks to see if I feel better or loose any weight. So, if you could find me recipes that are kind of "normal" but still provide tasty protein, that would be really nice. Also, it would be nice to use ingredients I have on hand and not have to buy a lot of expensive foods just to try a new recipe.

I'm a vegetarian but have yet to add any tofu to my diet because I don't know how to prepare it! I would love some that will allow me to add some tofu to my diet!

I have loads of tofu recipes. The first thing to remember is to get the best flavor and texture out of tofu drain the package, freeze it , then thaw and cook. It takes to most flavors so try marinating it in a sesame ginger seasoning sauce. (Buy it bottled or make you own), or my favorite teriyaki sauce. Then either bake or fry. When I fry mine I coat it with rice flour and fry in peanut or olive oil for extra flavor. You can also make mock egg salad using tofu.

One of the hardest things about being vegetarian is having to read labels. It's not just about not eating animal flesh. I am ovo-lacto so I eat some dairy, but I drink rice milk or almond milk. I also avoid cheeses made with rennet.

If you like Asian foods, do a search in your area for the local Asian market. They have a wide variety of vegetarian foods and mock meats.

@smilesandsunshine I'm not sure what mostly "normal means. However, here's an easy recipe I make when I don't feel like cooking. 1 can of chickpeas 1 small package of frozen spinach, thawed 1 can of low sodium dice tomatoes (I like the spicy kind) ½ glove of garlic diced fine sauté the garlic in a tiny bit of olive oil add everything else, heat serve over your brown rice or whole wheat pasta.

Great by itself or with a side salad
