Mulled tea

This great recipe gives green tea a Christmas party twist with traditional mulling spices, a bay leaf, cranberry sauce and mixed berries. It makes around 1 litre.

Ingredients β€’ 1 tbsp dried rose petals β€’ 4 cloves β€’ 1 bay leaf β€’ 1 cinnamon stick β€’ 2 handfuls frozen mixed berries β€’ 1 tsp cranberry sauce β€’ Β½ orange, quartered β€’ 1 green tea tea bag

Method - Pour 1 litre of water into a large saucepan then add the dried rose petals, cloves, bay leaf, cinnamon stick, frozen mixed berries, cranberry sauce and orange. Bring the mixture to the boil, stirring occasionally then take off the heat. Drop in the tea bag then leave to steep for 2-3 mins. Strain through a sieve into a heatproof jug and serve warm. Enjoy! :)

Vegan Golden Turmeric Milk

INGREDIENTS β–’2 cups oat milk (substitute coconut drinking milk for a Paleo option) β–’1 1/2 teaspoons ground turmeric* (or 1 1/2 tablespoons of freshly grated turmeric) β–’1 teaspoon ground ginger (or 1 tablespoon freshly grated ginger) β–’1/2 teaspoon ground cinnamon, or 1 large cinnamon stick β–’1/8 teaspoon ground cloves, or 1-2 whole cloves (optional) β–’1/8 teaspoon ground cardamom, or 2-3 cardamom pods, crushed (optional) β–’1/4 teaspoon freshly cracked black pepper β–’1 tablespoon unrefined virgin coconut oil β–’1 tablespoon pure maple syrup optional

INSTRUCTIONS Add the milk to a small saucepan over low heat. Add turmeric, ginger, cinnamon, cloves (if using), cardamom (if using), and black pepper. Whisk until well combined.

Bring the mixture to a simmer, but do not boil. Allow to simmer for 5-10 minutes, whisking occasionally, until smooth and hot. Alternatively, you warm the milk in the microwave and then whisk in all the ingredients using a whisk or an electric frother. Remove the saucepan from the heat. If you used whole spices, strain the golden milk over a fine mesh sieve and discard the solids. Stir the coconut oil and maple syrup (if using) into the milk. Taste and add maple syrup if needed. Use an electric frother to froth the latte, if desired. NOTES *If you are new to consuming turmeric and haven’t acquired the taste yet, use just 1 teaspoon.
