Response: The original recipe didn't have the rice. It was good but I wanted a complete dish. I think you could really play around with this dish if you had other things you wanted to include or different vegetables.

Response: Sometimes I slightly boil the potatoes, then drain them and bake them. But I've found microwaving works great and they don't get waterlogged. I also used to drizzle oil over them but found putting the oil on the pan and then using a spatula to "toss" the potatoes gave a much more even coating. Quick and easy, yet tasty is my general motto.

Response: I also found the ingredients too much for a regular coffee mug and even one person to eat, hence my modifications on the ingredient quantities. And a smaller cereal bowl actually works better than a mug IMO. Leaves a little room for ice cream or whipped cream.

Response: This is one of my oft used recipes, especially with chicken for company. Sometimes I just use canned black beans and leftover rice, no meat at all.
